Baked Strawberry Donuts


One word to describe these donuts: delicious. When I hear the word donuts, I`m always excited and then sad. Excited, because I just really love donuts. A lot. But, sad, because you know, they`re always so unhealthy...and everyone knows it!

When I was a junior in high school, someone told me donuts were so unhealthy, we should only eat ONE per year. ONE!! How can I do that?! I didn`t want to be unhealthy, so I tried my best to only eat 1. Which, never happened. However, I was close! Most years, I only ate three or so.

How on Earth did I accomplish this? Easy. I was young, so I didn`t have my own car a.k.a I didn`t have many chances to eat donuts. I didn`t have my own bank account a.k.a no money (unless I asked my parents).

Then, I got to college, got my own college apartment kitchen, my own car, money AND became the biggest foodie among my friends. I`m sure that one donut a year thing is boogus, but I was young. Even if it weren`t true, it`s healthier for my body to not eat so many donuts, since I eat so many french fries! So, I tried sticking with it and failed miserably this year. I`ve eaten so many donuts of all shapes and sizes this year, I can`t even remember!  Haha.



However, I don`t feel too guilty devouring these strawberry donuts since they`re baked. Of course, they`re still not healthy like eating an apple...but whenever I`m craving for those delicious deep fried donutty deliciousness, these will satisfy my donut cravings.

Since, these donuts are baked, their texture is kind of like a cake/muffin in a shape of a donut. These are very easy to make in comparison to real donuts, since you don`t need the yeast or the act of frying them in oil.

Personally, I loved this strawberry version much more than the blueberry ones I posted a few days ago. My friends absolutely loved these and sometimes bring it up during our conversations, which means these donuts are fabulous. :)

Baked Strawberry Donuts

Ingredients:
Donuts:
§  1 cup + 2 tablespoons all purpose flour
§  ¼ cup granulated sugar
§  ¼ teaspoon baking soda
§  ¼ teaspoon salt
§  1 teaspoon strawberry gelatin powder
§  ¼ cup + 2 tablespoons buttermilk
§  3 tablespoons vegetable oil
§  ½ teaspoon vanilla extract
§  1 large egg
§  2/3 strawberries, divided; 1/3 cup finely chopped strawberries + 1/3 cup strawberries pureed
Strawberry Glaze:
§  ¾ cups + 1 teaspoon powdered sugar
§  ¼ cup + 1 teaspoon heavy cream
§  1 teaspoon strawberry gelatin powder
§  1 tablespoon finely chopped strawberries
§  Sprinkles (Optional)

Materials Needed:
-          1 nonstick donut pan
-          2 medium bowls
-          2 small bowls
-          2 whisks
-          1 rubber spatula
-          1 pastry bag/sandwich bag
-          1 tall cup
-          1 cooling rack
-          1 baking spray
-          scissors
-          blender
Directions:
1.    Preheat your oven to 375F. Spray your donut pan (or butter).
Donuts:
2.    In a blender, puree 1/3 of the strawberries. Set aside.
3.    In a medium bowl, whisk together the flour, sugar, baking soda, salt, and strawberry gelatin powder.
4.    In another medium bowl, whisk the buttermilk, oil, vanilla extract, and egg. Then, add the pureed strawberries and combine.
5.    Make a well in the center of the dry ingredients (flour, sugar, etc) and add the wet ingredients (buttermilk, oil, etc) all at once. Mix until just combine.
6.    Using a rubber spatula, fold in the other 1/3 cup of finely chopped strawberries.
7.    Place a pastry bag (or sandwich bag) inside a tall cup with edges pulled over the sides of the cup. Transfer batter into the bag.
8.    Snip off the tip and pipe donut batter into donut pan.
9.    Bake for 10-12 minutes, or until toothpick comes out clean when inserted into the donut comes out clean.
10.  Keep donuts in pan for 10 more minutes before removing to a cooling rack.
Glaze:
11.  While donuts cool, make the glaze. In a small bowl, whisk together the powdered sugar, heavy cream, gelatin powder, and chopped strawberries.
12.  Dip each donut into the frosting and place on parchment paper.

13.  Add sprinkles on top.
