Cheesecake Pops


Next week is Valentine's Day! :) I have been saving this post for a year now. I made these last year and thought they were perfect for a Valentine's Day treat! They are the perfect cheesecake bite! Plus, they are ridiculously cute, because they`re like cake pops, but made with cheesecake instead of cake. I made these with an Oreo cookie crust, instead of the standard graham cracker crust.

I'm not a HUGE fan of the plain New York Cheesecake, because it's too much for me alone. However, these are small bites of cheesecake covered with a candy coating, so I was able to eat like, 3 at a time. Hehe. :)


If you don't know what treat to make for Valentine's day yet, definitely put this on your list! All you need to do is buy a pre-made cheesecake at a store, Oreos, candy melts, and lollipop sticks and you're set to go! If you're like me who already has Oreos, candy melts, and lollipop sticks around, all you need is the cheesecake.

I bought a small cheesecake instead of a big one because I was only giving them to one person and didn't want to make that many. If you're planning on making these for a few people, do get a bigger cheesecake.

I went to Michael's and found a cute Valentine's Day pop stand and thought it'll be an adorable way to deliver and present these cheesecake pops. Of course, you can just wrap them individually and hand them out as well.



Cheesecake Pops

Ingredients:
§  1 - 6 inch Cheesecake
§  6-10 Oreo cookies, without filling
§  Candy melts
§  Sprinkles, jimmies, chocolate shavings, etc
Materials Needed:
-          1-2 deep bowls (up to how many colors of candy melts you're using)
-          food processor
-          a cake pop stand/Styrofoam block
-          small baking sheet/large plate
-          parchment paper
-          small cookie scoop
-          freezer
-          microwave
 Directions:
1.      Line a baking sheet (or a big plate) with parchment paper. Set aside.
2.      Take about 6-10 Oreo cookies and finely crush them in a food processor. Transfer crumbs into a plate.
3.      Using a cookie scoop, scoop out 1 inch balls from the cheese cake and roll into a ball as smooth as you can. (Do not scoop/use the cheesecake crust. Only scoop the cheesecake.)
4.      Roll cheesecake ball into cookie crumbs and place on baking sheet. Continue doing this with the rest of the cheesecake.
5.      Place baking sheet with cheesecake in freezer for about 30 minutes, or until it's firm.
6.      Before removing cheesecake balls from the freezer, prepare your candy melts/sprinkles/etc.
7.      Microwave candy melts in a deep shallow bowl in 30 second intervals, stirring in between, until completely melted.
8.      Dip the tip of the lollipop stick into the candy melt and insert the stick into the cheesecake ball, about half way in.
9.      Dip cheesecake ball straight into melted candy melt. TIP: DO NOT roll the ball around if the ball is not completely submerged in the candy melts, instead use a spoon to scoop the melted candy around the ball and then slowly juggling the ball on the lollipop stick, twirl the pop out of the melted candy.
10.  Quickly, decorate with sprinkles, jimmies, chocolate shavings, or etc.
11.  Place cheesecake pop on styrofoam block to harden.
12.  Keep cheesecake pops in refrigerator until serving.
