White Chocolate Lemon Brownies


I`m glad my addiction for endless lemon flavored desserts will now match the bright, sunny weather outside! These lemon brownies are going to knock your pants/socks/clothes/etc off. Haha! I nearly rolled over when I took my first bite. It was beyond delicious, people!

These bars have a denser crumb texture compared to a typical cake, similar to a brownie (but, not a fudgey brownie). I added some white chocolate, since I completely adore the combination. My friend and I baked a white chocolate lemon cheesecake once and it was unforgettable. I knew I couldn`t go wrong by adding that white chocolate taste to complement the lemon.


The glaze is a simple lemon glaze, but oh-so-necessary for these brownies. Don`t get me wrong, the white chocolate lemon brownies are amazing alone. The glaze really enhances that tart, lemon flavor.

I couldn`t get enough of these bars. All the lemon lovers in my family only said praises for these. My sister told me to bake these all the time! Haha.

Honestly, I didn`t need more than a bite for me to decide that this recipe was making "My Favorites" list. I would bake these every single week during the Spring and Summer months if I could still fit into my jeans after it all. :P Make these for a little after school snack, Easter treat, picnic, or just because. They`ll brighten anyone`s day. Guaranteed!!

You can definitely add 1-2 more ounce of white chocolate if you want. Instead of the lemon glaze, you can even melt more white chocolate and drizzle them on top, as well. :)

White Chocolate Lemon Brownies

Ingredients:
White Chocolate Lemon Brownies:
-          2 oz white chocolate baking bar
-          ¾ cup all purpose flour
-          ¼ cup brown sugar
-          ½ cup granulated sugar
1/4 teaspoon salt
-          ½ cup unsalted butter, softened
-          2 large eggs
-          1 tablespoon lemon zest
-          2 tablespoons lemon juice
Glaze:
-          2/3 cup powdered sugar
-          1 ½ tablespoons lemon juice

Directions:
White Chocolate Lemon Brownies:
1.       Preheat oven to 350°F. Line bottom and sides of 8x8 inch nonstick pan with parchment paper/or grease well.
2.       In a microwavable bowl, melt white chocolate.
3.       In a bowl with electric mixer, cream together flour, sugars, salt, and butter.  
4.       Mix in the melted white chocolate (make sure it's cool, but melted).
5.       In a small bowl, whisk eggs, lemon zest, and lemon juice.
6.       Add to flour mixture (step 3) and combine until smooth.
7.       Transfer batter into prepared baking pan.
8.       Bake for 20-25 minutes, or until edges are lightly golden and a toothpick entered into the center comes out clean.
9.       Allow bars to cool in pan for about 5-10 before removing to cool completely on a cooling rack.
Glaze:
10.   In a small bowl, whisk together powdered sugar and lemon juice.
11.   Glaze cooled brownies.

*Notes:

-          White chocolate should not be hot when added into batter. It should still be melted, though.
